Lime Date Chutney is a preserve from the Parsi repertoire. It is made from freshest limes bought from the Vasaiwalas and Mejdool dates. The preserve is very unique in the way it uses ginger and garlic in minced form. The lime and date are whizzed in the mixer to give it a chunky yet scoopable consistency. When it is fresh the spices are very sharps but it mellows as the time passes. Then there is the bright red Kashmiri chili that gives it heat and color. Sugar and salt helps to make it soft and stay good for more than a year at room temperature. Never touch any preserve with we hands. Use dry spoons to serve the chutney. This is called Leebu Ni Chutney in Parsi homes.
